The oregano is harvested from the foothills of the White Mountains near Fres and Omalos and then slowly naturally dried. Oregano is the most popular herb used by Cretans in salads, sauces, fried and roasted vegetables and grilled meat and fish. Oregano mixed with olive oil makes a true Greek salad and the best marination for feta cheese and other white cheeses.
Cretan wild oregano has been known and recognised since antiquity and the Minoan age for their invaluable therapeutic merits, their nutrients and antiseptic properties. It can be used as a herbal tea for cold sores, for mouth ulcers or locally on the skin due its high thymol content.
